I had an urge to make twice baked potatoes, but I diverged (which happens often in my kitchen) and made twice baked potato casserole. It was phenomenal! I used: sour cream, cheddar cheese, milk, salt & pepper, bacon bits, and potatoes. The prep time took a bit, but it was well worth it! I put the shredded bits on top that you can get in the freezer isle for casseroles and voila, a crunchy and delicious side dish.
We were so excited to eat it, that I forgot to take the picture beforehand, whoops.
I’m really excited that the weather is warm and we can grill. I marinated chicken and asparagus for about two hours in fresh squeezed lemon juice, thyme, salt & pepper, and peperoncini, and then grilled it. Can’t wait to come up with some bbq concoctions!
